Specifications
Alcohol: 13.0%
Residual Sugar: 7.5 g/L
pH: 3.30
Titratable Acidity: 5.7 g/L
Climate: The early ripening season was mild and dry. Favourable conditions early in the season lead to a good fruit set. Wetter weather over late December caused rapid growth and a need for careful canopy management. The later part of the season was both warm and dry, with cool nights to retain acid freshness and delicate flavours. While there were spells of rain over harvest period, an open canopy and regular sea breezes helped to maintain clean, fully ripe grapes with fantastic flavours before heavy rains in mid April.
Soils: Gravel-threaded Moutere clay
Training: Standard vertical trellis
Harvest Date: 24th March, 2011
WINEMAKING
The fruit was machine harvested in cool evening conditions then immediately destemmed and pressed. The juice was cold settled and cool fermented with selected yeast strains to aid texture and the fruit's inherent aromatics. The entire fermentation was carried out in stainless steel.
